I love lentils, I'd do one lentil dish and one none.
So, either lentil soup, and something like cheese enchiladas. Or something like pasta with lentil and walnut bolognese and then a different soup. This is my family's current favorite vegetarian soup: https://monkeyandmekitchenadventures.com/thai-curry-brussel-sprout-soup/ That with some peanut noodles would be a great meal, but I don't know that that soup would freeze well. Just offering it as an option if you were open to donating 2 soups. Or soup as the main meal, and then frozen lentil/walnut bolognese sauce and some pasta (my kids like bolognese on cheese ravioli) instead of a frozen soup could be delicious. |

OK? Do you have a suggestion, or did you come here just to naysay other people who did exactly as OP asked, which was to offer suggestions for vegetarian meals that are good to bring to people? Tons of people love eggplant parm, which is why it is a staple on Italian restaurant menus. |

I have a veggie friend visiting and I plan to make butternut soup, naan pizzas with different veggie toppings (butternut/caramelized onion/goat cheese, mushroom/gruyere, caprese) and a big salad.
My carnivorous wife plans to have a steak for lunch.

Ratatouille is pretty easy to make and by varying the vegetables, you can accommodate most tastes.
Stuffed bell peppers are also good and pretty easy. Vegetarian ones with mushrooms and rice and a tomato sauce that can be served on the side are also good. |

| As a grateful recipient of vegetarian meals if you can, if you know others are bringing meals, refrain from pasta/lasagna as they'll likely be overloaded with that as its a go to vegetarian meal. The enchilada and soup suggestions are nice. Quiche, falafels and spanakopita nice with rice & salads. Think also of maybe a variety of appetizers type meal - where its just a change up from what would be expected. And ask if they'd be up for a breakfast for dinner night and send over a French toast strada they can bake with a bunch of berries. |
