[/quote] I've been veg for over 40 years and unfortunately eggplant makes me itchy - slight allergy - which is sad because I love it. Agree with the others to ask your friend if they have any food sensitivities or restrictions, in addition to being veg. That said, I think the quiche and chili suggestions here are great ones. No one ever says no to a homemade mac and cheese either (unless they don't eat dairy). There are so many good things to eat!
