Not the PP quoted but I make my own stir fry sauce with 2 parts soy sauce, 1 part sesame oil, ginger garlic paste, red pepper flakes and a bit of corn starch so that it sticks.

We do a taco salad that is black beans, garbanzo beans, kidney beans, half a bag of frozen corn, like 2 cups of diced tomatoes (You can used canned but fresh diced is way better), some diced avocado if you have it and pickled cabbage. Season to taste with whatever you have in the pantry. Top with sour cream or cheddar. Then they eat it with chips and my kids will devour a big bowl. And you can make it ahead.

Chickpea coconut curry! Sauté onion, garlic and ginger and then add a can of red curry paste. Once you have that mixed add two cans of chickpeas and a can of coconut milk and let it simmer. Serve over rice. Very easy and you can of course add some chopped jalapeño or Chiles to your aromatics for more spice. Great with some garlic naan , Trader Joe’s is very good

Sorry. I’m pp. store bought stir fry sauce if you don’t have time. I also like to mix equal parts soy sauce, peanut butter, lime juice, honey, and add sriracha to taste.

Our current new fave is Annie’s Lentil soup, slightly drained then on top of rice. I buy the frozen TJs rice that goes in the microwave for 3 mins. Dinner us on the table in less than 10 mins.

I love that soup. It is now about $5.50/can. For my family of 4, which includes a tween and teen, I could not het away with less than 3 cans for 4 of us (I actually think I’d need 4). That becomes very pricey!

+1 to stuffed bell peppers. I often stuff several on Sunday and then pop them in the oven as needed across the week.

Vegetarian chili is also very easy - peppers, onions, mushrooms, diced tomatoes, your choice of beans, and spices. Keeps well and is filling.
