Very easy vegetarian dinners

Hello!

We have a very busy week this week with lots of long evening events so I need something really quick and easy besides sandwiches, pasta or omelets to have for dinner. Any suggestions would be appreciated. 2 adults and two kids.

I find stuffed peppers an easy dinner to make. Black bean burgers with sweet potato fries. Lentil soup with sourdough bread.

Beans and rice bowls. Heat up can of beans and season them with whatever you like, make a pot of rice. Add whatever toppings.

That plus cheese and crackers is a nice dinner.

If that's too much (we all have those nights), mixing a can or bag of cooked lentils with a jar of salsa is a super fast salad that is also very nice with cheese and crackers, or there are some delicious lentil soups you can buy and serve with cheese and crackers.

Trader Joe's has several really good frozen veggie burgers. Serve with frozen french fries and home made coleslaw.

Sautéed kale or zucchini, microwaved brown rice, egg over easy or medium, with maybe a sauce if I’m feeling fancy.

Im an indian lifelong vegetarian and it’s weeks like this (more often than not), that i serve pancakes or omelettes for dinner. Also nothing wrong with pasta and jarred sauce.

Drain a can or two of black beans, heat them up with cumin and lime juice, serve with chips, sour cream, salsa, avocado, etc.

I made a big pot of ratatouille this week. The trick I found is to pre-roast most of the veggies. I just eat it as a stew with bread.

I make Chana Masala in my slow cooker.

Tofu stir fry (again pre baking the tofu really improves it). I mix a little peanut butter in the sauce and my kid loves it.

Sheet pan pizza or pizza rolls (basically make cinnamon rolls with pizza).

If you can make soup ahead of time to have on hand, I’d do that. I also do hummus, pita and some sides (cucumber, carrot, olives, maybe stuffed grape leaves) on nights like those. Quesadillas or burritos are another quick to put together dinner.
