Asian stir fry

Make the vegetables first , remove, then cook the meat and seafood. I use a stir fry oil with garlic and ginger and a sauce like Japanese barbecue, teriyaki , spicy Szechuan etc. serve the veggies and meats in separate serving bowls.

Op here, these are great ideas! I particularly like the rice bowl and Mediterranean ideas, but definitely checking out all the links.

I don't mind cooking some meat. I occasionally will make a couples portions when my in laws stay with us. I'm just not that familiar with cooking meat in large batches for 20 some people.

This isn’t campy if it gets everyone fed. OP can do a crockpot of BBQ chicken and black bean and corn salsa (or a pot of beans) and some roasted broccoli plus the cheese and sour cream (and cheat with real bacon bac-os). Balanced meal, appeals to everyone but the keto people.

If it's all meat eaters and you're vegetarian, ask if you can switch with pasta idiot. Why did they claim pasta night? No meat eaters want another carb dinner.

Me again. If you MUST cook and pasta lady won't switch, I know what you can do. Burger night. Buy nice fresh (no frozen!) pre made burgers, like 85% lean, and not from Walmart or Aldi (shudders!). Buns, 2 dozen corn on cob. Boil corn, and grill burgers. And hopefully a meat eater will help.

For you, you pan sautee 1/2 slab of tempeh in olive oil with very generous Old Bay on both sides, with lid on it till crispy, and put it on hamburger bun with veggie tartar sauce (like nayonaise with chopped pickles and lemon). It's veggie crab cake sandwich.

Bean and veggie enchiladas. You can even make them at home and bring frozen.

Or eggplant Parmesan.

Enchiladas are a good idea. Make a couple different types, chicken. Easy and can be prepared in advance
