Any suggestions for a vegetarian cooking for a large group of meat eaters at a rented beach house? Someone already claimed pasta night and taco night.
I was hoping for tacos since it's easy to let people choose whether or not to use meat. Any other tasty but not too time consuming meals like that? |

| Sandwich bar - provide mushrooms, fake meat/seitan, hummus, avocados for vegetarians and meat/cheese for the rest. Get good condiments, lettuce/tomatoes/pickles and chips and decent bread and it's a nice meal. |

| Can you BBQ? Almost any grilled vegetable is great. Could have Impossible or Beyond burgers/hot dogs as "meat" options. |

We made a sweet chili marinade and grilled pork chops, salmon and tofu in it. We also grilled corn on the cob and made salad.
Our non meat eating people are vegan, or I would have done halloumi instead of tofu. |

| Middle eastern? Buy lots of hummus and pita bread and frozen falafel balls and maybe make some rice. |

A vegetarian recipe that is consistently a hit with meat eaters in my house is Smitten Kitchen’s pizza beans, served with Caesar Salad. No meat needed, but we have done Italian sausage on the side. |

| Make your own pizzas. Get some Boboli pizza crusts, pizza sauce, cheese and toppings. Preheat the oven. Everyone makes their own and it's fine for both vegetarians and omnivores. With the 8 inch crusts as long as you stagger the pizzas and have two racks, you can fit 6 of them in most standard size ovens. For wide range ovens, you will get more in. |
| I would do a mediterranean/lebanese type of spread. Pita, chicken, falafel, hummus, olives, cucumbers, lettuce, etc. People can make salads and/or sandwiches. |
| I'd do the Mediterranean spread or grill burgers and dogs (beyond burger or marinated portobellos for veggie option) with tomato/cucumber salad and corn on the cob. |
