OP here. He likes pecan pie (and many other holiday pies), all sorts of cookies and things like banana and pumpkin breads. Thanks for the suggestion


I sent my folks some treats, including 4” pecan pies (thinking my Dad could keep them frozen and thaw one at a time as he wanted), pralines, and Caramillicans (seems to be similar to turtle candies) from Millican Pecan. My mon was particularly excited about the Caramillicans. They said everything was good, but honestly, I’m pretty sure they would have said that regardless.

My mother got remarried (to my FIL) when I was 12 yo. They have been married for ~40 years, during which time she baked often. A few years ago my mother started showing signs of dementia, which steadily advanced to the point where she had to be admitted to a full time memory care facility. My mother doesn't even know who I am anymore when I visit, and has trouble putting together basic sentences. So there's no chance of asking her for recipes etc. My FIL continues to live at their private home as he is still of sound mind and capable of self care.
