Quinoa salad is a favorite with my family. Cook the quinoa, add in any combination of diced cucumber and tomato, onion, roasted veggies, and chickpeas. Season with salt, pepper, olive oil, and lemon. I eat it on its own or as a side with salmon/chicken.

Japanese food. Thai food. Some Indian. Mexican. Italian with GF pasta. Replace flour with GF flour and milk with soy milk. That still leaves a lot of options.

Chilli made with beans and ground turkey.
Red or green Thai curry.
Noodle dishes made with rice noodles.
Stir-fries (can make your own sauces with tamari or you can buy GF sauces) with rice.
Rice bowls.
Fried rice dishes.
Bean burgers or chicken burgers with lettuce wraps.
Egg dishes (tortilla, omlettes, etc)
Quinoa salads (use instead of couscous or bulghur)
Kebabs (chicken, salmon, tofu, veg).
Hot soups (can thicken with potato if needed).
Cold soups (gazpacho etc).

And fishcakes. I make mine with canned fish, mash potato, and any other flavorings I have on hand. Last week I used canned salmon and preserved lemons, red chilli, capers and cilantro.

You can also make flavor bombs and freeze them in small quantities. I blend fresh herbs with a small amount of EVOO and use them to flavor pasta, or omelets, or baked potatoes, fish or chicken. Or fishcakes. Or soups. Or anything really. You can make loads of different ones. So maybe Thai herbs with coconut milk. Or Middle Eastern. Or Indian. It's such a quick way to make delicious meals.

I've just been going through the cookbook 'Milk Street Fast & Slow' to get some ideas for dinner (do you have an Instant Pot?). There are loads of recipes that would fit the bill, with some substitutions.

I'm going to make the eggplant, tomato and chickpea tagine tonight. It's supposed to be served with couscous, but you could use mash or cauliflower rice instead. The steamed whole cauliflower with miso looks good too. And the Peruvian quinoa stew. Sunday I'm making the clay pot chicken and rice with shiitake mushrooms. Or maybe the Indian chicken & cilantro stew.

I make this Mongolian beef recipe but use chicken instead and serve with rice. It's one of my kid's favorite recipes. No dairy and I just use GF soy sauce. (also celiac).
