Help me find recipes with no gluten, dairy, or red meat

Anonymous
One of my kids has an allergy to dairy and shrimp, I have celiac disease, and one kid refuses to eat red meat. Thank goodness my husband is not picky. But I'm going crazy to cook something besides baked chicken or fish and steamed or toasted veggies every night. What else can I cook?

Get the Whole30 cookbook. We like a lot of things from that book - one favorite is shepherd’s pie with ground Turkey and sweet potato topping.

I'm dairy and gluten free. My daugther is allergic to egg, wheat, soy, milk, white fish, seeds, nuts, and more. It's a nightmare. And my other kids is extremely picky. Something we can all eat is Salmon and potatoes, arepas or tacos with chicken, Chicken stew with rice, sweet potatoe with kale and pork chops, quinoa with veggies (but kids hate it).

I use lots of Asian ingredients and recipes. Easiest might be stir fries using cellophane noodles or rice sticks. You can add whatever protein and veggies you like. I use peanut oil, cilantro, sesame oil, fish sauce and soy sauce a lot, but it’s pretty easy to season and tailor this to your own needs and tastes. I also use jasmine and basmati rice a lot to add flavor.

Start from a point of what you CAN eat and plug those into a recipe finder.

We work with similar constraints and end up doing Bowls or tacos or stirfrys curries etc. Italian requires substitutions as do bread-based recipes.

Pasta with: marinara, clam sauce, turkey bolognese, aglio e olio, chicken piccata, gluten-free chicken or eggplant parmigiana (leave cheese off dairy free kid’s), sautéed vegetables in olive oil, some kind of dairy free Alfredo and chicken. You can have gluten free pasta for yours or everyone can.

Is pork ok? I’d add pork chops with roasted potatoes or sweet potatoes to the rotation. And one of our favorites is a slow-cooked or pressure-cooked pork chile verde, served over rice or corn tortillas with cilantro.

Also Thai lettuce wraps made with ground turkey. Just make sure you use a gluten free soy sauce.

Indian food has many vegetarian options. Eat with rice instead of naan and skip ghee, and it's vegan and gluten free.
Rice with:
daal (so many different kinds)
chana masala
aloo gobi
salmon tikka masala
Saag (can add tofu instead of paneer)

Dosa - rice-lentil crepes, can buy batter at Indian store

Both rice and potatoes can be served multiple ways. For meat and veg, you can add different spices to change up the flavors.

Asian and Latin foods will be great for you, OP. Start with Indian (lots of rice + coconut-based lentil or chicken or veg dishes) and Thai (rice or rice noodles with coco-nut based sauces). And big salads.
