Make breakfast egg scrambles in muffin tins. Make them veggie, and you can even add a little bit of sausage, bacon or ham if you want (like one sausage broken up between 6 muffins). You can make them in a muffin tin, cook them and then put them in a ziploc bag in the fridge or freezer. If you need, pop one in the microwave for about 30-60 seconds (depends if they are refrigerated or frozen and the power of your microwave), while your kids are putting on their shoes and jackets. If you need to help them, put it in the microwave, turn it on, then help them get on shoes and jackets. Then by the time they are ready to go, so is your breakfast. Wrap it in a napkin or paper towel and take it with you to the car. You can eat in the car.

I make my kids a smoothie with banana, some type of berry, a handful of spinach, high protein greek yogurt, and OJ. I then drink it myself.

Thanks - this reminds me that I used to own a nutribullet and make quick PB/banana/almond milk smoothies, a long time ago - but the nutribullet died and I never replaced it. Note to self, get a new one

| Smoothies are easy--you can make a batch and freeze them and just defrost 1 or 2 at a time. Egg cups or hard boiled eggs as others suggested--if you have an instant pot, making hard boiled eggs in it is great; they are very easy to peel! But also, if a bar is what you have time for there's no shame in that. Look for ones with less sugar and more protein and fiber. That plus a banana or some clementines is a good breakfast. |

Question - for Easter, I tried to make hard boiled eggs in my Ninja foodi and they cracked with some of the egg coming out. I don't remember what recipe I followed, but suggestions for a no fail way to make them in the ninja foodi? I think it was something like a cup of water, 5 min pressure cook, 5 min natural release. |

| Another vote for hard boiled eggs. We live them in my house. Even my kids eat them. I also grab bananas, mandarin oranges, and yogurt for breakfast. |

Yet another vote for hard boiled eggs. I make a dozen every weekend, at least. One DC takes them for lunch occasionally, and I eat 1-2 for breakfast a few days a week. They last a long time, at least a couple weeks. I use the Instant Pot or steam them.
My other regulars are: Sliced apples with peanut butter or cheddar cheese Plain whole yogurt with fresh fruit, honey and sliced almonds Overnight oats with peanut butter and maple syrup |
