Chicken sausage

I slice apple chicken sausage into rounds and bake it, after 10 minutes add diced sweet potato or butternut squash (and some thyme), after 10 minutes add string beans, after 10 minutes add diced apple. Colorful and delicious!

We eat all kinds of sausage including chicken. I like some of the Trader Joe's ones but not others. I thunk you have to do a bit of experimenting yourself.

True. But having spent a lot of time reading nutrition labels, PP is correct that sometimes the chicken and turkey sausages are not healthier on the fat/salt front.

I put it in anything really.

- pasta dishes
- stuffed peppers
- casseroles (don't hate)
- tacos

We buy Italian chicken sausage from the WF meat counter and roast with peppers, onions, and tomatoes drizzled with olive oil to eat with mashed potatoes or in sandwiches.

I also take the sausage out of the casing and make:

- pasta with sausage, kale/spinach/broccoli rabe, sundried tomatoes, and garlic
- soup with kale, canned tomatoes, sometimes small pasta (start by sauteeing onions, celery, carrots, garlic)
- frittatas with a mix of vegetables depending on what we have - asparagus, peppers, leeks, kale/spinach

My parents don't eat pork so they cook a lot of chicken/turkey sausage and I'm so used to that I cook it for my family too, even though we eat pork.

I like sheet pan meals. Slice the sausage, cut up veggies, toss with olive oil and a salt free seasoning blend like Mrs Dash. Bake in the oven at 425 until everything is brown and looks good. I like doing this with turkey kielbasa or chicken apple sausage.

Wegman's has a really good chicken sausage in a tube. Not pre-cooked. I like to use that for stuffed peppers or stuffed acorn squash.

I cook a lot of peppers and onions until soft. Then I saute the chicken sausage, add the peppers and onions back in, and serve over rice.
