Breakfast -- I would do instant pot oatmeal, greek yogurt, fruit salad.

Focus on the prediabetic and the 5 year old. Everyone else is making lifestyle choices, and they can deal with the consequences of their choices. The prediabetic has a health issue and the 5 year old is 5.

For breakfast I would make a frittata with bacon as the main. You can add fruit and yoghurt as sides.

For lunch I would make beef and chicken fajitas with Spanish rice and beans, guacamole, sour cream and garden salad, with ice cream and low carb cookies for dessert.

These go through get her pretty good actually.

Vegetable frittata, bacon, hash browns.
Fajitas or taco salad/make your wn burrito bar
Stir fry and fried rice.
NYT chicken shawarma served with saffron rice, veggies roasted in the same marinade and pita or naan
Eggplant and chicken Armenian, just use lo carb bread for the bread crumbs

I’m actually blanking on breakfast. I know one likes oatmeal, but that won’t be good for lower carbs. Hard boiled eggs maybe? And bacon? I’m just blanking on things I can set out that won’t require me to cook right before serving or things that can be set out waiting for people to eat.


Based on your initial post, various egg dishes sound great. Try a dutch baby, it doesn't have much flour in it, so should be way for your low-carb eater (use almond flour for your gluten free person).

Does your meat and potatoes eater consider fish to be meat? Mine does.

I would think of some meals where either the carb or the meat is a side that can be left off, or there can be 2 options to switch between.

So, for example,

Breakfast:

bacon/sausage, eggs, toast. Some people can have bacon and eggs, some people can have eggs and toast, some can have all 3.

Lunch/dinner

Lower carb vegetable soup, with bread and sandwich filling. Low carb person can just have soup, or soup with a side of turkey/cheese roll up. Vegetarian can have soup and a cheese sandwich.

Burgers (meat or veggie) with a choice or bread or lettuce under

Sheet pan meal with salmon, or meat and halloumi, and various vegetables. Low carb person can just not take the carby ones.
