I mean I think $75 is crazy expensive for a tart! But also, as a baker, tarts are harder/more time-consuming for me because you have to carefully select and slice the fruit really precisely so it's laid out in a visually pleasing manner whereas with a pie, it's all squished up and covered by the top crust. So a pie will take me less than 30 minutes to get into the oven start to finish (maybe a little longer if I'm doing a lattice crust or something fancy) but a tart or glace pie can take up to an hour.
But $75 is still a ripoff. I hope it has gold leaf on top or something.

| If you want that bakery to stay in business and not let go all of ours employees then us that's a good price. Also consider the cost of scarcity. It's nearly impossible to find butter and suet these days. |

That is costly indeed. I know all the expensive, organic and delicious patisseries in Paris and have never paid that much. You need to call them and ask about this. |

| Here’s the thing - there is always a “floor” for how little it may cost but there is not much of a “ceiling”. Sky’s the limit! I’m sure if OP named where these came from we’d be like oh well yeah that’s why. If you don’t want to pay for luxury dessert, shop elsewhere. Someone else will buy it. |

Demand is a justification of the price of what is a luxury item. If you really hated the price, you would have said no and then bought a pie from Harris Teeter or Safeway. What amazes me if drug companies’ justification for the prices of life saving things like insulin. My cancer treatments are $800 a pill. I take 21 pills a month. Thank God for my prescription plan. I wish I could just get a generic. |
