Where can I find good cookie recipes?

Anonymous
I just made my second meh recipe from an America’s Test Kitchen cookie recipe book. Way too sweet and bland, both ones. Anyone got a good cookie cook book or author or favorite recipe to recommend? I want a variety of flavors and textures, not just overpoweringly sweet.

I just bought her 101 cookbook yesterday and can't wait to look at it.

I am a complete novice at baking and the only recipes that have worked well for me have been on her site. The details really help for someone like me who didn't grow up baking -- like she tells you things like how the mixer should be on "medium" and that creaming the butter and sugar will probably take "x amount of minutes." With those kinds of details, I get it right (and learn what I was doing wrong before).

Are you using real butter?

I actually take the tollhouse recipe and modify it, depending on the cookie I want.

I agree with Sally’s BA and King Arthur. Additionally, I would add Broma Bakery and Butternut Bakery.

The recipe called for half butter and half oil for a supposedly chewier texture. I think the bigger difference was that it only called for 1/4 tsp cinnamon and 1 tsp vanilla as the spice - vs 1 tsp cinnamon and some nutmeg in the classic Quaker Oats recipe.

I always triple the vanilla in anything, and add an extra pinch of salt.

Op here. I am not experienced enough with cookie baking to make many modifications other than maybe adding some different spices or maybe subbing in Fra Angelico instead of vanilla!

You can usually double the r vanilla with no issues and often double cinnamon too.

It may also be the type of recipe you are selecting. If you’re picking something like snickerdoodles many people llle those really too sweet. But if you pick something “fancy” like rhubarb bundles or pistachio drops of something, it may have a more sophisticated palette (I’m making those names up but you get my drift).

We made her Carmel apple bars today.

I like Dorie Greenspan’s World Peace cookies.

Huh, I was going to suggest the ATK Family Baking Book, as it has many of my favorites, including molassas spice cookies, shortbread, peanut butter kisses, double chocolate, and a classic press sugar cookie.

I also like Sally's Baking Addiction though. I also like Love and Lemons. There are some good cookie recipes from Deb Perlman (on her site, Smitten Kitchen, and in some of her cookbooks).

My favorite chocolate chip cookie recipe is the Virginia Brown Butter Cookie recipe from this cookbook, contributed by my Criminal Law professor: https://19thamendmentcookbook.com/cookbook/cookbook.pdf
