Vegetarian sandwiches

I'm thinking about dusting off my bread machine and making sandwich bread, but what goes good on it? Looking for healthy, new ideas! Thanks!

Hummus, cucumber, red bell pepper, with or without cheese

Egg salad

White bean (use white beans like you would tuna in tuna salad. Some people like mayo but I prefer evoo and lemon)

Garbanzo beans and dill salad

Black bean burgers

Marinated tofu and veggies like spinach and pepper

Cucumbers and cream cheese with dill or arugula

Roasted veggies with aioli -- red pepper, eggplant, zucchini.

Egg salad

Caramelized onion grilled cheese.

I do a wide variety of cheese and veggie sandwiches. Some of my favorite combos:

Cheddar, lettuce, tomato (slice thin and salt the slices), dill pickles, yellow mustard

Cream cheese, cucumbers, sprouts, tomatoes

Goat cheese, arugula, roasted red peppers, aioli

Provolone, avocado, tomatoes, dijon

Smoked gouda, baby spinach, apples, mayo

Tomato, basil, mozzarella, balsamic vinegar
Grilled cheese

Marinated tomato sandwich (marinade in red wine vinegar, evoo, s+P for 15m, mix up some of the marinade with mayo. Toast the beef, apply the mixed mayo, top with tomatoes)

Cucumber, sprouts, cream cheese (add tomato, lettuce or avocado)

Greek salad style, cuke, olive, tomato, creamy feta. Make a Greek style dressing for the veggies.

The best thing I find is marinading or treating the veggies a little special. Plain cucumber or tomato can be bland, but making sure they have salt and other seasonings really take it up a notch.

Dill relish/kewpie mayo/cheese slice sandwich.

Saute shredded carrots ( can be substituted with sliced onion, or minced garlic+mushroom+spinach, or sliced tomato), mixed with raw eggs then make fried carrot egg, and add to bread.

Mix raw egg with salt/black pepper powder/mayo/cheese, cover on bread then bake in oven. Use parchment paper. Pair with salad or raw veggies.

Toast bread in oven...while bread is toasting, sauté Broccoli or broccolini until crisp-tender, add in a few roasted or sun-dried tomatoes and then finely chop up the cooked broccoli and and tomatoes until it is like a paste - spread one side of the bread with the broccoli past, and the other with a light layer of hummus, then add fresh spinach, arugula, tomatoes or veggies of your choice. A single layer of melted swiss is optional too - enjoy! .

Roasted eggplant marinated in a little garlic/evoo/salt/pepper
Eggplant Parmesan
Fresh mozz with tomatoes & basil in the summer, or roasted red peppers & arugula in the winter
Cucumber, tomato, hummus
Portobello mushroom and Swiss cheese
