Favorite crockpot/slow cooker meals?

We are entering a very busy season. I want to dig out my crockpot and use it a bit more.

I’m looking for flavorful dishes that aren’t super salty for my spouse (ie canned cream of chicken soup recipes are not great) each person can add salt as needed.

We do this red lentil curry pretty often. Always the low and slow method, much better than cooking on high. And it makes a ton, so we use the 1/2 recipe option.

Very easy: pork chops or pork loin, thawed or frozen, with can of cream of mushroom soup (sorry) for 4-6 hours on low or high - serve over egg noodles or mashed potatoes

Very easy: chicken breast or things, thawed or frozen, with jar of salsa for 4-6 hours on low or high - serve with tortillas/tacos or over rice, etc.

I really enjoy this black bean soup. You start with dried beans so you can control the salt better than with canned beans.

Pulled pork is my family favorite, can go on sandwhiches, over salad, spaghetti, etc.. 15 minutes of dumping ingredients (no searing ahead of time), turn on the crackpot, and your done. Come home to a great smelling kitchen and delicious food!

Just cooked a whole chicken last night...put carrots and cut potatoes in the bottom, season chicken with whatever you like. Cook on high 4-5 hours ..totally moist and delicious.creates its own juice.

How does the skin fare in the slow cooker? I do the same, but with skinless chicken thighs. It would be easier and more economical to put a whole chicken in!

My easiest recipe of all time, which luckily is a favorite for all of my kids (and a meal that all them equally like is pretty rare): salsa chicken. 4 boneless chicken breasts, a jar of salsa. That’s it. Shred when done.

I recommend Trader Joe’s Salsa Authentica. It’s super tasty but minimal ingredient salsa (no corn, green pepper, weird bits of vegetables a kid will complain about).

I will make Spanish rice as a side, and warm up some pinto beans. You can use the chicken for quesadillas, salads, tacos, bowls, nachos, so many meals. It reheats well.

NP. I roast a whole chicken in the crock pot. I place it breast side down on a bed of sliced onions for 4-5 hours on high then flip over and broil for a couple minutes to crisp the skin.

There will be a lot of juice left in the crock pot. After the chicken is eaten, I put the bones back in the crock pot with 1-2 additional carcasses, some spices (bay leaf, peppercorns, any leftover greens) and ACV for 18 hours to make bone broth.
