Favorite crockpot/slow cooker meals?

I tried this recipe and it’s amazing. Used the low setting. Even the half recipe makes a lot.

Instead of red salsa with chicken, I use salsa verde and some beer. Usually something like corona or PBR, although occasionally I'll get the roasted salsa verde and use modelo negra or another darker beer.

My husband did a pork shoulder with apple cider and onion a couple weeks ago. Results in a lot of leftovers, too, which is useful. I like to broil leftover pork for a few minutes to make easy mid-week carnitas.

I recommend Trader Joe’s Salsa Authentica. It’s super tasty but minimal ingredient salsa (no corn, green pepper, weird bits of vegetables a kid will complain about).

I will make Spanish rice as a side, and warm up some pinto beans. You can use the chicken for quesadillas, salads, tacos, bowls, nachos, so many meals. It reheats well.


We do the same thing but with a can of black beans as well.

I regularly use the slow cooker to make bulk food for my parties. Use it mainly for Indian food. Anything that was traditionally slow cooked on low heat or in "dum" usually comes out amazing.

I have made - spinach with goat meat curry, spinach-mixed greens saag, mustard saag, daal makhani, eggplant bharta (mash), rice pudding, carrot halwa, rabdi, mung daal halwa, daal banjara, nihari, haleem, all kinds of beans curries, curry masala in bulk (onions-tomatos-ginger-garlic-chillies-cilantro cooked together until they all caramelize),

I also regularly make marinara sauce, bone broth and pulled pork in BBQ sauce.
