How to use up/repurpose charcuterie meats

I have a ton of leftover charcuterie meats (various types of salami, prosciutto, etc) and I am getting tired of it! How do you repurpose it into something new, different or tasty?

Make a big chef’s salad/ antipasto salad

Chop small and mix into pasta— prosciutto with a light cream sauce and peas or another green veggie would work well

Use as a pizza topping

Mix into a quiche or frittata

I like salami in a cold potato (german) salad. Salami, red bliss potatoes, green onions, vinaigrette.

Salami would also be very nice in a pasta with cream sauce and sundried tomatoes. Or the prosciutto for that matter. Dice them finely.

All good ideas. You might be able to use some chopped up in a nice soup or chop up to serve with pasta.

I'd freeze it until I was in the mood for it again.

Indulgent hoagies with high piles of that stuff + cheese, shredded lettuce, tomato, onion, lots of peppers (banana, hot, cherry), mayo, oregano, olive oil and vinegar.

Salad with thinly chopped romaine, some of your sliced meats and cheeses, chick peas, hearts of palm artichokes, pickled red onion, red wine dijon vinaigerette, served with crusty bread and maybe soup.

Get a few pans of kings hawaiian rolls, take the whole top half off, layer with your meat and cheese, put the top half back on, and freeze. Easy sliders to brush with butter and pop in the oven this winter and serve with soup and/or salad. Add fig jam, dijon, caramelized onions, whatever your family likes.

I don’t like any of those meats. I would leave it in the trash for the raccoons.

NP. These are all great ideas. I might have to get some cold meats to try the sliders.

Bean salad with chickpeas, cannelini beans, diced cucumber, feta, parsley, olives, and salami/prosciutto.

Prosciutto wrapped canteloupe. Prosciutto wrapped shrimp.

Refrigerator crescent rolls, rolled up with meat and cheese and then baked.
