Easy(ish) pescatarian or pollotarian dishes?

Looking for easy(ish) pescatarian, pollotarian, or vegetarian recipes that have a decent amount of protein. Any favorite websites, recipes, or cookbooks?

I buy jarred simmer sauce (eg coconut curry), heat it up and simmer frozen cod fillets in it for 20 minutes. Can also add thawed frozen peas or any other thawed frozen vegetable.

I make a number of excellent chicken meatball recipes:

Chicken Parm Meatballs (assuming they will eat cheese)

Chicken piccata meatballs

Moroccan spice chicken meatballs

Chicken meatballs in a rosé sauce

And for pescatarians:

Shrimp and grits

Shrimp diavola

Garlic shrimp

Panko crusted salmon

Peanut butter salmon

(I used spinach instead of kale.)

Any dish normally made with gr beef can be made with ground chicken or turkey (if the people eat poultry not just chicken). Chili with beans is an obvious one for higher protein.

I love homemade tartar sauce with the baked fish. It's 1 cup mayo mixed with 2TB minced shallot, 2TB minced pickle, 1TB chopped capers, 2TB caper liquid from jar, juice from 1/2 lemon, 2TB buttermilk, and salt and pepper to taste. I pretty much make fish so I can eat this.

I made a sheet pan dinner which was redskin potatoes, broccoli florets, and chicken thighs all coated with olive oil and ranch dressing powder before baking. Everyone loved this plebeian food and it was the easiest thing I've made since summer. All I had to do was cut the potatoes.

Last time I had to make something for a pesectarian friend (with a picky toddler!), I made this and it was a hit: https://www.crumblycookie.net/2008/02/12/salmon-pesto-pasta/

Julia Child’s trout a la meunière. I guess you could use margarine.
