Easy(ish) pescatarian or pollotarian dishes?

OP, have you previously been eating only red meat? I don’t understand this question at all. You don’t have any recipes without beef or pork?

My go-to easy chicken recipe is boneless thighs or breasts coated in Tajin and roasted on a sheet pan with whatever veggie I have in the fridge.

Your ignorance is on appalling and embarrassing display. Trout a la meunière is dredged in flour and fried n butter/oil with some lemon, and capers if desired. It is so childishly simple and easy that any kid with basic skills could knock it out in a few minutes.
