Help with the name of an eggplant dish I used to love - Middle Eastern I think

I once ate this dish at a party and liked it so much that I googled the recipe and made it 3 or 4 times. That was years ago and now I cannot remember the name of the dish to Google it again!

What I remember:

1 - it was DELICIOUS! (Duh!)

2 - the main ingredients were eggplants and TONS of olive oil

3 - I’m not sure, but I *think* there were other vegetables there as well, such as onions, garlic, bell peppers and maybe, even black olives.

4 - the main thing it is that the veggies were roasted together with a Ton of EVOO! There was/is even a story/fable surrounding the dish as that was so much olive oil used that the husband fainted (cost $$$) about it - or something along the lines. But the dish has a folklore tale surrounding it - THAT I remember!

5 - it is vegetarian- no meat involved.

Can anyone here help me remember what is the NAME of this dish??? I want to prepare it for a work potluck next week. It would be a great side dish for the vegetarians in the crowd, but also pretty much anyone would like it.

Years ago there was an amazing recipe printed in the WaPo that I've since lost...it was eggplant with yogurt, served cold or room temp. Any idea what that would be called? It was to die for.

Sounds like a dish I enjoy at Bacchus in Bethesda, which comes in a vegetarian option:

FATTET MAKDOUS
Lebanese bread soaked in pomegranate sauce & yogurt garlic, topped with eggplant & ground beef with pine nuts. Garnished with almonds ( Vegetarian option available ).

This was my first thought. Melts in your mouth!

I've tried to recreate a different really great eggplant dish, eggplant with garlicy yogurt sauce, in case anyone knows what that is. They served it at Skewers, a restaurant that used to be in Dupont Circle, with crispy pita chips and parsley, I believe. I haven't been successful at all in figuring out what made it so good.
