4 - the main thing it is that the veggies were roasted together with a Ton of EVOO! There was/is even a story/fable surrounding the dish as that was so much olive oil used that the husband fainted (cost $$$) about it - or something along the lines. But the dish has a folklore tale surrounding it - THAT I remember!

5 - it is vegetarian- no meat involved.

Can anyone here help me remember what is the NAME of this dish??? I want to prepare it for a work potluck next week. It would be a great side dish for the vegetarians in the crowd, but also pretty much anyone would like it.[/quote]
