What is lunch today?

Looking for ideas. Used to eat leftovers a lot, but with two teenage boys, leftovers aren't a given anymore, no matter how much I make.

Bonus if it's healthy and you made it yourself, but I'm interested in the full range.

My typical lunches:

-Leftover soup over baked tofu
-Cottage cheese, avocado and hard boiled eggs, chopped up
-Egglife wraps with tofurkey, cheese, veggies, chipotle mayo
-Veg chicken over caesar salad
-A veggie burger, fried egg and chipotle mayo in a tortilla

Tuna salad which is Tuna fish; lots of garbanzo beans: a little bit of leftover pasta: peas; scallions: herbs; mustard; balsamic vinegar and olive oil. I think it’s pretty healthy.

Some days I eat Icelandic yogurt with berries and granola.

If I’m home I usually make a green salad or a spinach cheese omelette.

Well I left late for work and was grabbing stuff, so I usually eat better than this but today it is some grape tomatoes, an apple, and two berry muffins (the homemade size—I made them, not the huge things you buy at the store or Starbucks or whatever).

Today is leftover Mac & cheese from a restaurant dinner last week. Most often it’s a salad (bagged kit and add some chicken to it if it needs protein) or homemade tuna or chicken salad, or avocado toast with feta.

Leftovers from last night's carnitas burritos - a bit of pulled pork and some black beans over grilled onions, peppers and corn.

Small container of Greek 2% yogurt with fresh blueberries and raspberries and some Grape Nuts. I also had this for breakfast (so lazy). Will need a decent sized snack before I work out after work.

Leftovers from making my ES kid tuna salad (we have the Costco size cans) and some veggies and a roll.

I had a very small slice of Quiche Lorraine, with a side salad of mesclun/arugula/fennel with pear and prosciutto vinagrette.

I've been big into green/grain/legume bowls lately.

I make big batches on the weekend of lentils, pinto or black beans, or chickpeas. Freeze in 1/2 cup containers. Also make big batches of short grain brown rice and freeze in 1/2 cup containers.

For lunch I pull out a rice container and and lentil or bean container, then add spinach or chopped kale and any other veggies I have on hand. That all goes to work with me and gets warmed up in the microwave, then I add some combination of chopped cucumbers, hummus, tzaziki or raita, and a dressing of olive oil, lemon juice, and red wine vinegar.

It takes a little prep work on the weekend, but 5 minutes to throw everything into a lunch bag in the morning and 2 minutes to microwave at work.

Had a chilled vermicelli bowl w/ sliced white meat chicken, red peppers, peanut sauce.
