Looking for inspiration! And trying to weed through the 1000s of online recipes out there.

We recently tried these two and really liked both. And I was skeptical of both of them for different reasons . . .

The only fish dish that everyone will eat, and it's super easy to boot:

Quick and easy tomato sauce that's better than anything that comes out of a jar:

The go-to sheet pan dinner:

And I like to serve the above with this as a side dish (I skip the shallot and sometimes use orzo or acini de pepe instead of Israeli couscous):

My entire family likes sheet pan chicken thighs, sometimes with rice or potatoes, or just bread and salad:
6 thighs with bone and skin, dried with a paper towel
Sprinkle dredge on bottom and top of thighs
Arrange so not touching on a sheet pan
Bake at 425° for 40 minutes.

Dredge proportions (I make a big jar to keep on hand)
2 Onion powder
2 salt
2 paprika
1 garlic powder
1 Black pepper
1 dried Thyme

For a one dish dinner, my family also likes something like the sheet pan chicken thighs that the 14:38 poster mentioned, but I switch up the spice rub and surround them with veggies (broccoli, cauliflower, squash, brussels - whatever your family likes) and potatoes.

Fish tacos are also a hit - something like this recipe: https://tastesbetterfromscratch.com/grilled-fish-tacos/

We'll broil or grill fish or shrimp, make a simple cream sauce (often just yogurt, lime, garlic or yogurt mixed with chipotle peppers from a can) and top with slaw, avocado, and/or mango, pineapple or normal salsa.
