I'm going to pull out the food processor, so getting some blocks of cheese that I shred on my own and freeze some, and then probably shred some carrots for convenience.
Then since it's out I'll make hummus which is amazing fresh. Need to pick up pita and anything else to eat up that hummus with. Any other ideas? |

Based on what's on sale, tomorrow I'll pick up a big pack of ground beef, 2 rotisserie chickens, and the standard produce order. I'll do chicken w/ veggies and rice for dinner, shred any remaining meat and the meat from the 2nd chicken, and save the bones from both in the "soup trash" bag in my freezer. Some of the leftover meat will be wraps later in the week, and the rest will be split in the freezer: white for a future enchilada casserole, dark for the future soup.
Monday, after prepping all the usual fruits/veggies, I'll make a giant vat of chili, 2/3 of which will be frozen for future meals. Tuesday: wraps Wednesday: boil those bones for stock (along with the "trash" of carrot peels, onion peels, etc., which I save after veggie prep) and make soup. I'll either make bread or buy a take-and-bake) Thursday: chili leftovers Friday: asst. leftovers (chicken, veg), probably over some pasta Kids are with their dad over the weekend, so I don't have to worry about that. I try to batch cook and freeze as often as possible to minimize the amount of work. Wednesdays are my "easy day", when I could possible make bread or bigger projects, but the rest of my time is pretty booked, so I try to cook once and eat 2-4 times from that meal and its leftovers/components. |
Yes, I’ll make most of everything tomorrow then plan out which days we will eat everything based on what lasts a couple of days, what can be frozen for Thursday or Friday, and what should be eaten first. Now that I’m thinking about it, I think I will probably throw the soup in the freezer for late in the week, chili verde too. Start off lunches with the cauliflower salad. Let me think here: Sunday: lasagna rolls, salad, bread Monday: falafel salads Tuesday: pumpkin pasta, salad Wednesday: leftovers Thursday: lentil soup, bread Friday: chili verde Lunches will go something like: Cauliflower salad Cauliflower salad Random snacks that I throw in my bag Random bag snacks or takeout egg salad Leftovers/bag snacks/egg salad I hate dealing with lunch. |
| Chicken broth/soup tomorrow. Probably make rice too for fried rice monday. Chop a ton of leeks for lamb and leek stew (they freeze well). |

| I buy orange tomatoes each saturday and on Sunday I make a tomato- chicken-pasta-ricotta cheese mixture and portion it into four or five servings. Doesn’t look pretty but tastes so good! |

Thank you! I try really hard to cook seasonally and eat in season produce. I do my best to get what I can from local farms. I love when a new fruit season starts. |
