Potluck suggestion - vegetarian Texmex entree

Anonymous
This is for the post competition dinner for both parents and kids. It needs to be vegetarian and serve 10. It is an entree so needs to be carb/protein heavy.

Bean and cheese quesadillas ? Chips and salsa or queso or whatever as well?

Black bean and sweet potato enchiladas
Can bake more like a lasagna to avoid having to roll up the tortillas

Add a side of corn
Side of green rice
Side of refried beans
Side salad
Chips
Guac
Salsa
Fruit salad

Churros for dessert

I recently made pizza beans and they were a huge hit for something like this. You could do a tex Mex version easily with pinto beans. I think there even is a smitten kitchen recipe that is like this baked pintos with all the fixings on top.

Jackfruit taco
Buffalo battered tofu.

cheese enchiladas with salsa verde. Maybe flautas?

The vegetarian thing is really throwing this. /there's not that many entrees that are veg (other than some great soups). Chile relleno? But that's not great for a) people on this coast; and b) a large group.

I've done large vats of refried beans and Mex red rice (never heard of 'green rice" per PP above) for people before with slow cooked meats. But maybe leave the meats out?

And easy to make your own salsas.

Yeah, veg TexMex is complicated but also everybody stands and eats so soupy stuff doesn’t work.

Black bean and cheese quesadillas.

Enchiladas (cheese, bean)

Bean and cheese burritos or some sort of casserole meant to be like a burrito or enchiladas.

My kids enjoy these cheese enchiladas. I add black beans and green onions to the filling. You might need to make two pans to serve 10. I use her homemade enchilada sauce too.

OP here: thanks for all the ideas. Quinoa sounds like a good addition to make it a filling meal.
