Potluck suggestion - vegetarian Texmex entree

Corn taco style tortilla quesadillas. Fold them in half. Easy to eat like a taco and you can mess with the ingredients to make it fancier- green chiles, pico, fajita veggies, etc.

Quinoa salad is a great idea.

You can make it with chickpeas, tiny mozzarella balls, marinated and/or fresh peppers, asparagus, and a basil vinaigrette with chopped fresh basil.

Or you could make it with black beans, corn, cherry tomatoes, green onions, cilantro, lime, and a light cider-vinegar Mexican vinaigrette. Add cotija cheese if you want.

Texas (cowboy) caviar burritos or really any other vegetarian burrito. Quinoa is not super filling, so if you go that route, add cheese, sour cream, avocado or other fats to help with the satiety. Veggie quesadillas are another good option.

OP - are you trying to make something impressive/unusual or just something tasty and filling?

I'm a vegetarian who loves Tex Mex and if it's the latter, you have a zillion options.

In that case I would make a huge thing of black bean nachos or burritos. It's so easy and tasty. Add a bunch of tomatoes, corn, red peppers, avocado to healthy it up.

Bring a quinoa salad, too, if you want to - but vegetarians love beans and cheese, mixed with a salty carb. At least this vegetarian loves that.

I make lentil enchiladas (same as beef but use the TJ cooked black lentils instead of meat) and they are extremely popular at potlucks for kids events.

Will there be other veg dishes or is this the only? In the fall/winter I like to do black bean and sweet potato enchiladas, but that's seems heavy for a pool party. Quinoa bake is a good idea. This time of year I love a black bean salad with red peppers, tomato, corn, avocado, lime dressing. But if it's the only veg dish maybe it's more of a side.
