It was a bag of Mexican blend cheese. The bag says it is 1 and a 1/4 cup. I know because I buy them all the time. I used 8 chicken thighs and cut them off the bones and grilled them that way. I used a whole onion and 4 big peppers. We had a bag of 10 flour tortillas.


For two adults, two teenaged athletes and two children you could buy two of those little bags of cheese, double the thighs, three more onions and triple the tortillas. You really aren't feeding them enough at all.


If I was doing this meal, I'd likely add rice and beans on the side, and a salad.

Why just onion and peppers? What about tomatoes? Guac? Olives? Black Beans? Plus, most standard bags of cheese have 2 cups in them...where did you buy one with just 1 1/4? You'd probably get more just shredding a big block of cheese yourself.

My kids don't eat a ton so I'm not at the point where I feel I can't feed them but I think you need to come to terms with the fact you're creating the problem.

Op here.

We had salsa and a can of black beans that I cooked with seasonings. I didn't serve rice because the tortillas are carbs and rice is another carb so I didn't think we needed it. My kids love my cooking and they say it's always delicious.

They requested spaghetti for dinner tonight so hopefully this will be more filling.

Tonight's dinner I'm making meatballs using an lb of ground beef and I will use a full box of pasta and cheese. Baked spaghetti. I'm taking the pps advice and I'll make a salad with lettuce, spinach, sunflower seeds, mandarin oranges and thousand island dressing. They like that.

OP, you have issues. One can of black beans, and it would not have killed you to cook rice with it. Most tex-mex meals include both tortillas and rice. I hope you are counting on at least 10-12 meatballs for each one of the teens tonight as well as DH, maybe 6-8 for you and the younger kids. 2 lbs of spaghetti, right? A salad and bread too?

You need 2-3 lbs of beef and 2 lbs of pasta. And triple whatever minuscule amount of cheese you plan on using.

Start cooking twice as much as you think will be enough.

When you have leftovers, you have cooked enough.

I haven't gone back and checked, but it's occurred to me that the 3rd child, who is still fairly small, is a girl. Is that right?

This mom clearly has issues with food and volume, and while I think DCUM might be getting her to see that teenage boys need A LOT of food/fuel, I really think the poor girl in this family is going to be set up for some food issues of her own.

Older women who have had children don't need a lot of calories - I'm betting the mom eats 1500 calories, give or take, a day.

Growing kids simply need a lot more calories- certainly double that amount, and depending on metabolism and exercise even more.

I'm not disparaging your cooking. Your food sounds good. It's just geared toward older adult portion sizes. One pound of spaghetti for 8 people is not enough. 10 chicken legs for 6 people is not enough. One rack of ribs for 6 people is not enough.

If you do want to continue for small portion sizes, expect to have your kids eat another meal in the later evening.

You can either increase portion sizes, or increase frequency of meals. Maybe 5 meals a day with small sizes is where you're heading.

I don't have food issues. I just also feel like a pound of ground beef is a lot of meat. I will use two boxes of pasta for tonight and I'll make extra meatballs. I feel like a failure. Even when I order a pizza and wings for the family they are still hungry. At this point my goal is really just to have left overs so I know everyone is content.

OP, you can't be serious. You've gotten so much advice here. I think you need to just start doubling or tripling what you think is the "right" amount and then you'll be much closer to what your family really needs to feel full. You also need to understand sides - add a veggie side or two, salad, and bread to every meal (that already includes meat and carbs)!!!!
