I made 2 dozen chocolate cupcakes with chocolate buttercream frosting, 1 dozen lemon cupcakes with lemon buttercream, 8 quarts of applesauce, and 3 lbs worth of chili. Also did 3 loads of laundry and put fresh bedding n all the beds, but now I’m just showing off.

I made vegetarian shepherds pie with Trader Joe’s beefless beef crumbles. The last time I made mashed potatoes my kid said she didn’t like them, so I put a small amount of mash on the side of hers, just to have… but not all over the top. She ate all the potato and wanted more… kids are so finicky.

I binge-watched Lupin yesterday on Netflix, woke up late today, took care of the pets, prepared a kid for a competition, prepared a meal for tomorrow and made an apple crumble. Now we're sitting down for a college admissions webinar. |

I am ordering Poke for dinner tonight. Youth athletic games took over our weekend and we’re about to head out of town in a few days so trying not to buy a ton of groceries.

| I had scrambled eggs and a Dave's Killer Bread bagel for breakfast, then garlic shrimp and pasta with butter for lunch, and tonight I am cooking salmon for the first time (see thread elsewhere in this forum) and will have that with roasted broccoli and a pouch of lentils and brown rice. |

Cooked navy beans in pressure cooker, then sautéed onions, garlic, thyme, cabbage with some cumin, seasoning and chili. Added cabbage, beans, and tomato paste, with a little red wine, Worcestershire sauce, and maple syrup.
The kids complained about it and said they had wanted take tonight. |

And I just recently discovered Dave’s Killer Bread. As recommended because I need more fiber, but I actually really like it as a good everyday sandwich bread. Hope your salmon turned out great. Salmon is a standard in my house— super easy to cook and even the kids like it. |

I didn't do that much today, but this weekend I made:
- a massive pot of veggie chili - cornbread - chicken tinga tacos - homemade guac and salsa ...and I bought cupcakes |
| Made several loaves of pumpkin bread for coworkers; tested a new recipe for chocolate chip cookies (still not quite perfect); made a batch of beef stew for the week. made steak salad with blue cheese for dinner. Have a jar of preserved lemon paste that I want to try in a couple of things for the week. Normally make a loaf of challah for the week but skipped it cause used all my flour for pumpkin bread and cookies. |
I can improve on this, I looked at an Amazon box and instead of opening it, I checked on the app to see what is in there and decided to leave it for now. |
