I sometimes make ham and cheese sliders, also known as “funeral sandwiches,” in two batches: one to eat that night for dinner with soup, and one batch to freeze until the next crazy night when I just need to pull something out to eat along with soup and salad.

I set out all the non perishables for breakfast before I go to bed at night.
Before I leave for work in the morning, I set the table for dinner and put out dinner non perishables. |

This more of a batch cooking meal prep. I make a huge batch of meatballs. Usually, 10 meals of Italian and 6 meals of sweedish. After I cook them I will freeze them on a cookie sheet. Once frozen I put them in ziplock bags by meal size. In one afternoon I can make enough for 16 quick meals.
Anyone in the family (dh and all of our kids 10+) no how to make a pot of noodles. The Italian get microwaved in a bowl of sauce. The sweedish get warmed up in a pan with sweedish broth (beef broth, worcheshire sauce and nutmeg). For many meals I make enough for 2 meals. One for tonight, one gets frozen. Stew, pot roast, soup, stuffed shells. If I'm making rice I make double. The leftovers get turned into either fried rice or beans and rice. These are usually taken as lunch in a thermos by our teens. |
