Meals like Korean ground beef

Someone recommended Korean Bulgogi beef with ground beef on this forum and I loved it.

Kid loved it for school lunch.

Easy to round out with frozen rice and veg.

Dump and cook in a one pan for 8-10 minutes, which I did happily at 10pm for the next day.

No crockpot mess, no giant pot or heavy Dutch oven or greasy sheet tray. No waiting for oven to preheat.

Can anyone recommend similar recipes that are great?

There’s a Thai dish called larb that is somewhat similar. You can use other ground meats, doesn’t have to be beef.

I also like to make japchae noodles with vegetables, meat and egg.

Save your bulgogi and make bibimbap, add some gochujang sauce and a fried egg.

If you know how to make sushi, you can make gimbap rolls for lunch the next day.

You can do a lot of Asian themed rice bowls with an easy protein/quick sauteed veggies or microwaved veggies/rice

Korean bulgogi beef like you mentioned
Teriyaki chicken with skinless boneless thighs
Ground chicken or pork seasoned like the stuffing of lettuce cups
Minced tofu (it's really good with soy sauce and maple syrup)

Then add your easy stir fried or microwave-steamed veggie

Have some condiments like kimchi on hand

Maybe make a quick pickled cucumber or shredded carrot

If feeling fancy , add a fried egg

We do "build your own rice bowl" at least once a week

Picadillo. There are several variations, I like this recipe from Melissa Joulwan but I usually just serve with rice or roasted potatoes instead of dealing with the plantains. I am more heavy handed with the slices, raisins, and olives too.

With glass noddles for husband
with rice for the kids
with kelp noodles for myself

The last park where it says “add marinade to the noodles” I use 1/2 the marinade because as the recipe calls for it, it makes it too salty.
