Suggestions for vegetarian picnic foods

I have an all-day outdoor event on Saturday and then again on Sunday, running from 1 p.m. until 9 p.m. I'll need to pack my own food. Any suggestions for what to eat that will keep well in the heat? I mean, obviously PB and J is an option, but I'm looking for maybe pasta or bean salads or anything else? I'll have a small cooler, and I'm not opposed to buying prepared food ahead of time, but I'm stalling out on ideas. Any recipes would be much appreciated.

Lots of bean salads:

White beans with halved cherry tomatoes, scallions and dressed in olive oil and lemon juice

Cold lentil salad with red onion and parsley, also tossed in olive oil and lemon juice

Garbanzos and Israeli couscous with parsley, red onion, red peppers and zucchini

Others:

Greek pasta salad (sundried tomatoes, artichoke hearts, olives and Greek dressing)

Sesame or peanut noodles

Black bean and quinoa salad

Bring a baguette and some pita, and maybe stick some cheese in the cooler.

This is always a hit with my family.

Lentil-Pomegranate-Mango Salad

Salad

2 cups cooked black/beluga lentils. Canned and rinsed works fine, canned black beans do too.

Seeds of 1 pomegranate

one half a minced red onion

1 seeded, minced jalapeño (or not, if you have kids who don't like spice)

Handful of cilantro leaves, chopped

1 mango, peeled, cut into small bits

Dressing (everything to taste)

juice of 2 limes

olive oil

salt

pepper

Mix together all the fresh ingredients, then pour dressing over and toss. Let sit 5 minutes.

My go-to is orzo pasta with chopped peppers, snap peas, carrots and red onion, cubed mozzarella and a feta vinaigrette.

Cold soups in a thermos. Such as cucumber or corn.

Put chopped veggies in a container that you can put in a tortilla with a dressing like Tsaziki. Potato salad. Nuts. Crackers. Just use a lot of ice packs.

It if we’re me I’d pack myself beef jerky, nuts, fruit, and Lara bars and just snack all day.

Btw, I know you said vegetarian but I read it as you were looking for non perishable things. Jerky is obviously not vegetarian if that’s actually what you meant!
