WWYD for sides, salad with this recipe?

One of DH's faves and he has asked me to make it when we have overnight guests in a few weeks. Normally I just do a simple salad, but would like to kick it up for this dinner. Thanks in advance for suggestions.

That looks delicious. I think a simple salad is perfect, and would not provide more at dinner given the rice and veggies in the dish. What I’d do instead is focus on some delicious apps. You didn’t ask for suggestions but I’d do a caprese salad with baguette slices on the side, and a hard cheese with fresh fruit like cherries and rice crackers.

You could do miso soup
A stir fry with edamame and book choy
Korean pancake
A mix of Korean banchan like seaweed salad, kimchi, marinated mushrooms, bean sprouts, carrot, tofu cubes.
