Best no cook meals

My DD is super busy in activities. I usually pack her a dinner to eat between dance classes, but forget myself and often don't eat till we get home at 8:30ish. What are your favorite 15 min or less now cook (or barely cook) meals? I'm brain dead and out of ideas. Thank you!

Anything you pre-cook, freeze, let thaw overnight, and defrost in the microwave for like 5 min.

I don't even want to pre-cook. I'm talking like assemble meals... I've done salads, quinoa bowls and avocado toast pretty frequently if that give you an idea of how low effort I mean haha. Appreciate your advice!

I'm a grazer by nature and love nice breads, dips, cheeses, nuts, sliced fruits and veggies, and occasionally lox or lunchmeats. If it's just me and a late night, I fix myself a plate right out of whatever we have in the fridge. If I have a kid with me, I will throw in a "fancy" grilled cheese depending on their tastes. A nice combo is half a baguette with jarred pesto on it, sliced tomato, and some kind of cheese (mozzarella is a basic favorite).

we also enjoy a breakfast for dinner: pancakes or french toast, eggs, and bacon.

(in case it isn't obvious, you throw this in the toaster oven until the cheese is melted and the tomato is warm).

Just make the same thing for yoruself that you make for her. I pick up soup from Whole Foods and warm it to a boil at home.

Quesadilla - tortilla, beans, cheese, hot sauce if desired - fold and microwave for 1-2 minutes.

Chicken caesar wrap - buy a rotisserie chicken and shred it, buy a bagged caesar salad kit, wrap in tortilla.

I made this during the week and it was good cold but better stuffed between a tortilla and toasted in the toaster oven.

That lentil salad looks good. Other salads like tabbouleh and quinoa salads or a salad with kale instead of lettuce also can be made in advance.
