Precooked lentils, Trader Joe’s cruciferous crunch salad mix, Trader Joe’s carrot miso dressing. Add sliced almonds if you want.
This is a hearty salad that takes 2 minutes to assemble.

This is my all-time favorite meal. It’s eaten cold, so you can easily make it ahead and take on the go. I like to make it and eat as my lunch all week.

Time/cooking savers: Use rotisserie or leftover chicken for a quick protein, or shelled edamame. Buy the veggies pre shredded to save time— I often just use a cole slaw mix.

I don't even want to pre-cook. I'm talking like assemble meals... I've done salads, quinoa bowls and avocado toast pretty frequently if that give you an idea of how low effort I mean haha. Appreciate your advice!

Yes- was going to suggest this too. My latest version for @2 servings:

2 cloves garlic, finely chopped
@1.5” piece fresh ginger root, peeled and finely grated (less for less kick)
1 tsp (?toasted) sesame oil
Squeeze of gojuchang or hot sauce
1.5 Tablespoons low sodium soy sauce
@1-2 Tablespoons chunky natural peanut butter
(Optional, dash of tahini)
@1 spoon water as needed

Mix and refrigerate. It’s great with thin spaghetti made ahead of time, topped with shredded carrots as well as hothouse cucumber (I remove some of the seeded fleshy part).
