This is our first year housing Easter with a strong majority of attendees vegetarian. Several are relatively new vegetarians who in the past have eaten fish in Good Friday and a roast lamb on Easter. The meat and fish eaters have said they'd happily go along with a vegetarian meal.
Any ideas what to serve? I cook a lot of vegetarian soups and stews and frittatas, but am at a loss for what would feel like special main meals for Friday, Saturday, and Sunday. Our usual sides with the lamb are asparagus and roasted or mashed potatoes. |

| Quiche and salad comes to mind for a brunch style meal on Easter Sunday itself. You could fo an eggplant parm with salad, bread Sat night. A vegetarian soup like minestrone on Friday? |

This. There are some butternut squash recipes. You can do stuffed mushrooms too. But not all people like mushrooms. |

| We're doing spinach quiche, blueberry lemon scones and fruit for brunch. For dinner we'll have the NYT baked risotto with greens and peas, and roasted asparagus on the side. Will probably also have roasted potatoes for the teenager and, time permitting, will make some sort of light soup. Lemon pudding cakes for dessert - saw someone post the recipe here and decided to try it. |

I have not made this personally, but of the most diehard carnivores I know RAVES about the PW vegetarian lasagna. |

Be careful with the dishes mentioned that contain cheese. Most cheese is not vegetarian due to the rennet.
Look for ones with vegetable rennet or microbial rennet. |
