Rate my Lunch -TJ edition

I am following the added sugar thread and want to eat a bit healthier, especially at lunch. I WAH on Monday and am in the office Tues and Weds. In an effort to eat better and save $ by bringing lunch, here is what I made today, divided into 3 portions and will eat today/Tues/Weds:

One pint grape tomatoes
One package TJ frozen bell peppers and onions
One package TJ grilled chicken breast
One bag TJ baby spinach
One bag TJ brown rice (frozen section)
1/2 can black beans

I sauteed all of the vegetables/beans/chicken in a little EVOO. Microwaved the bag of rice. Mixed it all together and portioned into thirds.

?Healthy? A good mix of what i need for the day? Anything to add/change/delete?

Diffeent strokes for different folks. Sounds "carby" to me, but if you like it-- wonderful.

If you are sautéing the items- then buying fresh vegetables and raw chicken and cutting up and cooking would taste so much better. I’d add an avocado for some heathy fat

Brown rice and black beans are very nutritious and healthy. Sounds great OP!

You do realize some carbs are necessary and healthy in a balanced diet, right?

Sounds good to me, OO, but PP’s suggestion to add some avocado sounds good to me. I’d also check to make sure no added sodium to the frozen veggies and rice.

Sounds good to me, OO, but PP’s suggestion to add some avocado sounds good to me. I’d also check to make sure no added sodium to the frozen veggies and rice.


OP here.. trying to understand why would I want/need to add fat? Wouldn't that just add calories I don't need?

Because fat is more satiating, and you need it to absorb fat-soluble vitamins.

What are the ingredients in the TJ chicken breast?

I think avocado is a good idea. I was going to suggest that an extra drizzle of olive oil or a sprinkling of cheddar cheese would sort of hold it together nicely. Some good fat will keep you more full and will help keep your skin and hair nice. Overall, nice lunch.

This. While yes it does add calories, reduce elsewhere if a specific calorie count is the goal. You should aim to get some heathy fats, protein, fiber, whole grain with your meals to be balanced

Id add a bit of feta ( the TJ one in the blue container is so good) and a small sprinkle of slivered almonds or pepitas bc I love a little crunch!
