It's just going to be the 4 of us, but I don't want to be making the same old things. Options are limited because my kids have tons of allergies (dairy, egg, soy, wheat, nuts, legumes, seafood and others).
My fall back plan is steak/salmon, potatoes and salad. But I'm looking for something more exciting. |

For 4, consider a roast duck.
Add roasted veggies as a side. |

I like this recipe for pork tenderloin: 1 lb. pork tenderloin 12 slices bacon 6 slices onion 6 thick slices tomato salt pepper Cut the tenderloin into 6 medallions. (If you cut on an angle you get a wider surface.) Cross 2 slices of bacon and put pork in the middle. Sprinkle some salt and pepper on it, then lay the tomato on top of that, more salt and pepper, then the onion, more salt and pepper. Bring up the sides of the bacon and secure with a toothpick or skewer. Put the six bundles on a 9 x 13 baking pan and cover with aluminum foil. Bake at 350 F for 30 min. Uncover and bake 30 more minutes. Maybe rice/wild rice as a side Potatoes served a different way, Sweet Potatoes served like potatoes (mashed, baked). Sauteed/grilled mushrooms or onions., baked acorn squash - stuffed with brown sugar and margarine(?) or butter substitute, steamed broccoli or asparagus with lemon, escalivada (Catalan roasted vegetables), spinach sauteed with garlic in olive oil |
| Thanks for the suggestions. I may go with duck. Maybe just breasts in the pan with some kind of jus or sauce. I would love to do a leg of lamb but don't trust myself to cook it perfectly well. Any good potatoes recipe? |

I can't really visualize how it looks like after it's cooked but I'll give it a try. |

Duck is very easy! Remove giblets and cut off the last wing joint. Season with salt and pepper inside and all over (I used adobo seasoning). Stuff with quartered apples, I like mine on the tart side. Oven should be preheated to 375F. Place the duck in a large cast iron Dutch oven and pour a bottle of beer. Cover and roast for 1 hour. Take off the lid and roast for one more hour. Done. I am pretty sure beer can be substituted with veg stock if there are food sensitivity concerns. |
