Season with salt and pepper inside and all over (I used adobo seasoning). Stuff with quartered apples, I like mine on the tart side. Oven should be preheated to 375F. Place the duck in a large cast iron Dutch oven and pour a bottle of beer. Cover and roast for 1 hour. Take off the lid and roast for one more hour. Done. I am pretty sure beer can be substituted with veg stock if there are food sensitivity concerns. [/quote]
