How to cook 2 small briskets

I want to make brisket for a Hanukkah dinner this week, and am in search of a delicious recipe. A problem I am running into is that most recipes I see call for a big piece of brisket, at least 6-8 lbs. However I have 2 small cuts if brisket, one is about 2 lbs, one is 1.5 lbs. Will using 2 smaller meats vs one bigger piece cause a problem when cooking? And any recipe recommendations? TIA!

It won't cause a problem per se however Brisket shrinks tremendously and smaller ones tend to be tougher.

I would put them both in the same large pan.

It is fine you have slightly less pounds when making this. But like i said put both briskets in the same pan, preferably a large one.

It is best to make this a day ahead. Put in fridge cut. cold put back in the sauce and then reheat.

We like the Post’s brisket nina recipe. And the whole of brisket recipes is to cook them for long time to make them tender so I wouldn’t worry about having smaller pieces.
