Mashed potatoes and carrots are my go to for that. I am also not a fancy person. Oh, and some rolls or bread.

Cheesy scalloped potatoes and green beans.

Potatoes of any kind is right. Scalloped, twice baked, mashed. Plus green beans or asparagus.

Just what I was going to say. I’d do the green beans with toasted almond slivers, and either cheesy potatoes, macaroni and cheese, or popovers. Apple pie for dessert, or pears, apples and cheese.

mashed potatoes or twice baked potatoes. scalloped potatoes can be polarizing, but if everyone loves them go for it

This crispy potato recipe is amazing. We had these with beef tenderloin last Christmas and everyone was super happy:

We also had roasted asparagus and a salad on the side.

Mashed potatoes and your favorite vegetable. In the winter I prefer brussels sprouts and in the spring would choose asparagus, but any vegetable works. If you like green beans, somewhere years ago I had a recipe for green beans with some sauteed diced red bell pepper in it so you had that Christmas red and green effect.

This is our Christmas menu. This year we're doing the tenderloin sous vide and searing in garlic butter.

Basically a starch and a green vegetable. Potatoes and green beans are popular for a reason.
