| Where can I find a lovely, preferably organic, hunk of Parmesan in DC? I’ve found ones that taste like nothing but salt. And those that taste like nothing at all. Any suggestions? NW DC is where I live and shop, but I’d travel for a good Parm! |

| As a PP noted, you should look or ask for "parmigiano reggiano" and also buy one made in Italy. Some products get some kind of stamp of approval from Italian government, but I don't have details on that. I haven't been to Italy, so I can't compare on the authenticity. I pay a lot for the parm I buy though. Eastern Market cheese counter is good for parm. I often just buy a block at Safeway though. Oh, and buy the block/wedge (not pre shredded)!! That's a major difference. |

Pecorino Romano can be very strong. I don’t care for it as a parm regg substitute. Very different flavor profile.

I like Trader Joe’s Parmiagiano Reggiano better than Costco’s - but either will work. I am not convinced that the cheese at Italian delis is superior. I am sure you could special order some really aged and expensive, but for everyday use Trader Joe’s is decent, imported and nutty. |

I like both the TJs and the Costco. I’ve also bought it at balducci’s and also from south mountain creamery. It’s all pretty good and much better than giant.
My friend gets it at the Italian store in Arlington but I actually think that has too strong a flavor. We go through a lot of parmegiana in my house. |
