They taste very similar. If you have a sensitive palate, you will notice a difference, but most won’t. We grew up with Romano and I prefer it, but they’re pretty much interchangeable. |

Pecorino is saltier and has a tangy/sharp flavor profile ftom the sheep’s milk. Reggiano has a milder, slightly nutty profile. Don’t confuse “Parmesan” with DOP Reggiano. |
