Can this still be eaten?
If I cut this part off.. What kind of cheese? How much was this cheese? Aren't there other cheeses at the store with more mold than this? Do you triage or do you just throw at the first sight of mold? |

| I triage like you posted. But if I’ve had the cheese for more than a couple weeks, I toss. If it’s never been opened I trim it and try to finish it soon. |
+1. I don't usually buy soft cheeses, but for hard cheeses, I am not even thinking - just cut the moldy piece off and keep going. |

NP. Just yesterday I was wondering if our large wedge of blue cheese had gotten too old, or possibly moldy, and then I was like….oh wait |

Agree if it's soft cheese I would trash. Especially because there might be mold that is not visible (some mold is white).
If it's a hard cheese I'm more likely to cut off and use, especially if it's something like parmesan that I might need for a recipe -- I'm not going to scrap a recipe due to a little bit of mold. Though I have to say that this is the sort of thing I don't deal with as much anymore because we've instituted a weekly fridge clean/review and have gotten better about checking the fridge before we grocery shop. We don't come across moldy cheese basically ever anymore. We have less in our fridge but everything gets eaten. |
