Back to work tomorrow after a summer off. When home, I eat much healthier eating smaller meals and snacks as needed, and I have no problem making healthier choices this way. At work I go with a sandwich or frozen meal out of convenience, which I don't even love and isn't so healthy.
So what are some more snacky lunch type foods I can prepare in advance and keep in the work fridge for a week? Cut fruit, veggies, cheese, hard boiled eggs, nuts, pretzels, rice cakes, dried fruit, yogurt based dips. Any other (meatless) ideas? |

People on here are weird. I described a PB&J sandwich and apple on here once as healthy and lots of people said it wasn’t healthy. |
| Op here....a sandwich can be healthy, but I don't eat meat, so it's limited protein, and the filling part really is just the bread. More carbs than would be in a handful of crackers or pretzels. "Healthy" certainly varies by person. Bring vegetarian AND knowing my own body and habits I have to actively be aware of limiting carbs and am better off filling up on veggies. I'm not judging anyone's sandwich, but I've lost weight and getting way more veggie intake when I'm home without even trying and this is the main difference in my diet. |

Soba or other cold noodles with vegetables and boiled egg. Rice paper rolls. |
Got it. I get a little rankled that sandwiches get a bad rap for being unhealthy in our diet culture when they’re a perfectly healthy and balanced option for many people. Anyway, I think you have most of your vegetarian snacky options covered. I would go to Trader Joe’s to get a variety of the fun stuff to switch up. Different kinds of crackers, cheese, and dip combos as well as tons of different nuts and trail mixes. They also have a few things I’d add—Greek seasoned chickpeas which are great straight from the can, and canned vegan stuffed grape leaves. Also—a tortilla (low carb if that’s better for you) spread with peanut butter, cream cheese, hummus, etc and sliced into pinwheels. |
Thanks! I hear you, and there are some distorted views of healthy around here and I do believe it varies so much by each individual, so I understand. (I've done WW and remember people talking about how evil grapes are. GRAPES! No one ever got fat by eating grapes) I always forget about trader Joe's, and never heard of those flavored chick peas which sound good! |

+1 to the TJ’s marinated chickpeas! I also like roasting chickpeas with different seasonings for a crunchy snack.
I think your ideas cover most of what I would recommend! I’ll also add nut butter with apple or celery, as well as plantain chips. |

I do forget about gazpacho, and my garden tomatoes are still going strong! I'll probably go through a soup phase in winter too, making a batch at the beginning of the week to bring in. |
