| Socca is very easy to make and can be served with a variety of spreads. Another one I do is polenta (slow cooked in a pot), that I spread out on sheet pans, cut into rounds, and then air-fry. Cold bean salads; cooked veggie salads served cold ( eggplant in tomato sauce, spicy carrot). Fava beans or baby Lima beans (pre soaked overnight) can be filling, served in a variety of preparations, and are cheap. |
