Best vegetarian sandwich

I love sandwiches but I’m in a bit of a rut. I live near a great bakery where I can get most things except focaccia. What are good vegetarian sandwiches you make? Can include wraps too.

I grilles some zucchini with olive oil and garlic and put it on white bread with pesto, tomatos and fresh mozarella — so good!

Home made falafel in fresh pita is delicious.

I love eggplant parm but that’s a pain to make.

I’ve wanted to try the chick pea version of tuna salad but haven’t done that yet.

Chickpea salad sandwiches are good.

I also like these focaccia sandwiches with hummus, pickled carrots and cucumber.

OP here- thanks for the suggestions. I love caprese and I grow basil. I always add balsamic to mine. I don’t eat a lot of PBJ but maybe I should with some crunchy peanut butter and artisanal jams that I get from the farmers market. I love pesto too so that’s a great suggestion.

Any ideas with Brie?

Add cashews to grilled or cold sandwiches. So satisfying.

Busboys and Poets used to have this cauliflower sandwich that I loved but it's no longer on the menu. I can make one that's 70% close, but it gets worse every time I make it because my frame of reference is gone.

It was cauliflower roasted with turmeric (yellow) on a baguette with harrisa mayo, lettuce, pickled radishes, and I loved adding balsamic vinaigrette to it. So simple, so elusive.

But for now I don't think anything beats fresh sourdough with a little mayo, fresh tomatoes, salt, pepper, fresh basil, a little garlic olive oil and a little balsamic. Open faced.
