I love open face thick cut whole grain toasted with brie or fresh mozz, sliced peaches, basil and balsamic drizzle.

Wheat bread toasted with PB with sliced apples or bananas.

Sourdough with slice of boars head spicy three pepper cheese (or hummus), sliced tomato, cucumber, avocado, lettuce and sprouts.

Any kind of avocado toast! Avo lemon squeeze, s/p - avo with ebtb seasoning - sliced radishes, cucumbers, tomato, lettuce, shredded carrots, pickled onions etc.

I like a cheese sandwich with lots of crunchy lettuce, onions, good tomatoe, banana peppers and/ or some oil and vinegar, then Swiss and provolone cheese. Think an Italian hoagie without the meat, with good cheeses. Yum!

I was coming to add this. I like to make flavored egg salads. Curry and ginger are and paprika are good flavors for egg salad (my paprika egg salad is flavored like a flavor my deviled eggs).

I sometimes get nostalgic for the 80s hippie sandwiches of my youth: Hummus, cheddar, tomato, avocado, sprouts on a roll, assembled behind the co-op deli counter by someone in a Phranc t-shirt.

I love Potbelly’s mushroom melts. While I haven’t made them, I suppose you could. They layer mushrooms and then cheese on bread, and heat until the mushrooms are softened and the cheese is melted. Then you add toppings as you want. I generally had lettuce, tomato, and Italian seasoning.

Black bean burgers (I like Sally's Baking Addiction ones). I don't mind them cold - add a spicy mayo and some cabbage slaw (just cabbage with lime).

Fig, goat cheese, and caramelized onion.

Hummus and roasted veggies.
