What is your Easter Meal?

I've having deviled eggs, Ham, roasted brussels sprouts, asparagus with lemon, dill potato salad, fruit salad and corn muffins. I made homemade cinnamon rolls with cream cheese icing for brunch, well eat the leftovers for our Easter dessert.

I’m not cooking. We went to see my parents for brunch and brought home leftovers including ham, rolls, and potatoes.

Roasted leg of lamb (marinated in white wine, lemon juice, EVOO, rosemary, thyme, oregano and garlic). Scalloped potatoes, asparagus, parmesan risotto. Key lime pie for dessert and lots of chocolates!

lamb rib chops with mint sauce, roasted potatoes, carrots, green beans and cauliflower. No dessert but tons of chocolate!

I’ve had a migraine all weekend so missed the larger family meal - made myself a corned beef with cabbage and potatoes. Reese’s peanut butter eggs for dessert - yes they are awful but it’s just once a year and they are the perfect balance of chocolate and peanut butter.

I made a salmon filet on a bed of lemon with an herbed garlic butter sauce, herbed rice pilaf, roasted Parmesan Brussels sprouts, asparagus, and rolls. We had strawberries with cream and Easter candy for dessert. Just finished cleaning it up!

Grilled cheese and green beans.

I had a chicken to roast and some potatoes, but the weather was gorgeous and the kids and I spent 3 hours at the park instead. I’m solo this weekend so there was no one to put the chicken in. Oh well. Worth it! We did make some cute bunny cakes and decorated them

They aren’t awful, they are lovely. I wish I had one right now.
