-Make sheet pan omelets- put the sautéed fillings in a sheetpan (spinach, frozen broccoli, onion, whatever you have to use up from your fridge), whisk the eggs and pour over the fillings, bake at 350, check at 8-10 mins (you can find a recipe too, but this is what I loosely follow), top with your favorite cheese, cut into squares and serve or freeze for a convenient breakfast. You can also make this as muffins in a muffin tin.
-make coconut macaroons with the egg whites, and use the egg yolks for pudding -make “protein” pancakes and add a bunch of egg whites to a pancake recipe to add protein. |

They are farm share eggs so they are brown and green or I would! I get two dozen more tomorrow and then have to buy a dozen more white ones. I don’t know how we didn’t use eggs over the last couple of weeks. |
